Chocolate Truffle

Chocolate Truffle

How can I fix a White Chocolate truffle?

I followed a chocolate peanut butter truffle recipe I found in Southern Living magazine and it was fine… but then I tried it again with white chocolate and I can’t get the mix to harden enough to form a ball. Do I need to whip the mix more? Is there just something really different about white chocolate? Is there something I can add or do to salvage this?
Thank you all for the advice! Yes, it’s been refrigerated overnight now and it’s still soft.

Have you tried putting the mixture in the refrigerator? I’m fairly certain that would help firm it up. When it is more-firm, you can scoop it into truffles, put them on a wax/parchment paper lined dish/tray and keep them refrigerated. No need to muck up the mixture with other textures and flavors if that’s not what you’re after.
